How to make hyderabadi chicken dum biriyani restaurant style
Hi all..In this topic i am going to tell you about how to make world famous hyderabadi chicken dum biriyani at home..It is a very famous dish in whole world..
Ingredients required:
- 1 kg chicken
- 500 gm basmati rice
For marination:
- 3 tbsp ginger garlic paste
- 2 tbsp yogurt
- 1 tbsp of turmeric powder
- 1 tbsp of red chili powder
- 1 tbsp coriander powder
- 1 tbsp of lemon juice
- 1 tbsp of olive oil
- Spices:
- 1 tbsp of jeera
- 3 cloves
- 2 bayleaves
- 5 cardamon
- 3 star anise
- 5 cinnamon sticks
- 5 pepper corn
- 2 mace
- 1 tbsp coriander powder
- 1 small nutmeg
- 1 tbsp of fennel seeds
- 1 tbsp of caraway seeds
- 2 black cardamon
- 2 fried onion medium size
- 2 tbsp green chili crushed
- Some fresh coriander leaves
- Some mint leaves
- Salt as required
- 5 tbsp of oil
- 1 tbsp of butter
Method:
-Soak basmati rice in water in a bowl for 1 hour..
-Then take a bowl,add chicken pieces & marinate the pieces with ginger garlic paste,yogurt,turmeric powder,red chili powder,coriander powder,lemon juice,butter & olive oil..You can add chopped mint & coriander leaves also put it in refrigerator for 2 hours (you can marinate it for over night also)..
-Then make a fine powder of the spices cloves,pepper corn,coriander seeds,bay leaves,fennel seeds,caraway seeds,cardamon,star anise,black cardamon,nutmeg,mace,cinnamon stick...
-Then take bowl add 3 to 4 liters of water, add salt,oil,cardamon,cloves,caraway seeds,cinnamon stick & mix it & let it boil for few minutes..When the water comes to boil add the soaked rice & cook it till 70%...
-At the same time take another pan heat some oil in it & cook the marinate chicken till 80%..
-Then take a big bowl & first add a layer of cooked rice in it then add the cooked chicken pieces into it,again add some rice & put a layer of chicken pieces & some fresh mint & coriander leaves & finally add the fried onions,some melted butter,saffron soaked milk in it,you can also add some rose water in it & cover the bowl with a lid & lined it with a dough for dum..
-Then cooked it for 30 minute in low flame ...After 30 minute put the gas off & open the seal of the lid..
-Your hyderabadi style chicken biriyani is now ready to serve..Serve it with raita..

- 2 cup of rice flour

Method:
-Take a bowl then add all purpose flour,rice flour,powdered sugar,salt & sesame seeds ...Mix them well..
-Now add coconut milk,mix all ingredients well till it become slight thick & enough to stick to the mould..
-Heat some oil for deep fry..
-When the oil become heat,dip the half of rose cookies mould in the batter & deep fry in oil till its color changes to light brown..
-When the cookies become brown then remove the cookies from the mould using a fork..

- 20 medium sized prawns
- 1 tbsp of olive oil
- 1/3 cup of butter

How to make eggless butterscotch cake/pastry
Hi all..In this topic i am going to tell you how to make butterscotch cake/pastry without oven/with oven..
Ingredients required:
3/4 cup powdered sugar
3/4 cup milk
2 teaspoon vinegar
1+1/4 cup of all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup of oil
2 teaspoon butterscotch essence
4 drops of yellow food color
For butterscotch praline:
1/2 cup of sugar
1/4 cups of mixed nuts (cashew,almond,peanut)
2 tablespoon of water
For butterscotch sauce:
1/2 cup of sugar
1/4 cup of butter
1/2 cup fresh cream
Method:
-First we make the butter milk,For this take 3/4 cup of milk & add 2 teaspoon of vinegar then mix it well..
-After this take a bowl & add all purpose flour,powdered sugar,baking powder,baking soda & mix it..
-Then add butter milk & oil ,mix all,then add butterscotch essence & yellow food color & mix it well ..
-Take a 6 inch of cake mould,pour the batter in to it then heat up a pressure cooker or pan for 6 to 7 minutes in medium flame then place the mould inside the pan & cook it for 50 to 55 minutes or bake it in 180 degree preheated oven for 30 minutes..
-For butterscotch praline take a pan into gas put sugar then add 2 tablespoon of water & let it caramelized then add the cashew,almond,peanut & mix it..
-Spread the mixture to a baking paper & let it cool completely..Then break it into small pieces,crush it...
-After 50 to 55 minutes your cake is ready & let the cake cool completely..
-For butterscotch caramel sauce you have to take a pan,put sugar into it then caramelized it ,add butter & fresh creme mix it well ,let it cool..Put the sauce into a piping bag for decoration..
-Then cut the cake into 3 pieces & then take one part of cake & sprinkle some sugar syrup over it..then apply a thick whipped creme (250 ml of whipped creme+few drops of yellow food color+some butterscotch essence) above it,then put another part of the cake on it & again also sprinkle the sugar syrup over it & apply a thick creme, again put third part of the cake then cover the whole cake with the whipped creme..
-Then sprinkle the praline on the cake & decorate with the sauce..
Your butterscotch cake/pastry is ready to serve..

Ingredients required:
500 gm paneer
For gravy:
- 1 cup of curd
- 2 small onion
- 3 tomatoes
- 2 tbsp of butter
- 2 tbsp ghee
- 3 dry red chilies
- 2 tbsp of cashew nuts
- 3 tbsp of cornflour
- 2 to 3 tbsp of fresh cream
- 8 garlic pods
- 1 small piece of ginger
- 1 bay leaf
- 4 cloves
- 3 cinnamon
- 2 cardamom
- 1 tbsp cumin seeds
- Salt as required
- Garam masala powder
- Coriander powder
- Turmeric powder
- Red chili powder
- Some fresh coriander leaves
- 1 tbsp of mint leaves
- Fenugreek leaves
Method:
-Cut the paneer into equal size & coat the paneer with mint & coriander chutney..
-Take a bowl ,add cornflour,salt & water & make a paste.Dip the coated panner into this paste..
-Then take a non stick pan & put some oil in it,after that fry the paneer pieces until it turned golden brown..
-Take another pan ,add butter,cumin seeds,cloves,cardamon,cinnamon sticks,red chilli & stir fry it for few minutes..Add garlic & ginger & fry for few minutes,add the onions & cook until they are cooked & tender,add tomatoes & cook it for 4 minutes..
-Add the cashew nuts,& water & cover the pan with lid & let it cooked for 10 minutes..
-Once it cooked,put the gas off & let it cool down then add this to a mixture & add little water & blend it till it turns to a smooth paste..
-Then in this same pan ,add some more butter & ghee ..
-Add a bay leaf,& stir well then add the mixture to it & cook it for about 5 minutes,add salt,turmeric powder,red chilli powder,coriander powder,garam masala powder ,curd & mix it well..
-Add fenugreek leaves & fresh cream to it..
-Then add the fried panner & cook it for 2 minutes..
-Add fresh coriander leaves & put the gas off..
Your panner butter masala is ready to serve!!

Ingredients required:
For crust:
- 250 grams of refined flour
- 1/2 cup of powered sugar
- salt to taste
- 70 grams butter
For filling:
- 2 tbsp butter
- 5 green apples chopped
- 60 grams of castor sugar
- 1 tbsp of milk
- 1 tbsp of cinnamon powder
- 1 tbsp of corn flour
- 60 grams of brown sugar
Method:
-To make crust dough,take a bowl then put refined flour,powdered sugar,salt ,mix it well ..Then add butter & mix well..Add 1 tbsp of chilled water, knead it to a semi-stiff dough..
-Place the dough on a cling firm,seal it with a wrap & refrigerate it..
-Heat a non-stick pan ,add butter in this 7 let it melt,add apples,castor sugar,brown sugar & cinnamon powder & cook it for 5 mins,once apples release their juices,drain & transfer this juices to a separate bowl..
-Boil the extract juice for 5 minutes & pour it to the apple pieces..Let it cool down to room temperature..
-Preheat oven at 180 C
-Divide the crust dough into equal portions.Dust the working top with from refined flour & roll out the crust into thin sheets.
-Line a pie dish with the rolled dough sheet..
-Prick the base of pie crust with a fork..
-Transfer the apple mixture to the pie dish & cover with another sheet of dough..Make a criss-cross pattern on top...
-Dust some castor sugar on the top & place the dish in the baking oven & bake it for 30 minutes till the crust turn to light golden..
-After 30 minutes,remove the dish from the oven & transfer it to a serving dish ...

Ingredients required:
500 gm chicken
For gravy:
- 2 big size chopped onions
- 3 tbsn ginger garlic paste
- 1 big size grated tomato
- 1 tbsn yogurt
- 1 bay leaf
- 2 to 3 cardamon
- 2 to 3 black pepper
- half cinnamon stick
- 1 to 2 dry red chili
- 1 tbs dry coriander
- 1 tbs cumin seeds
- 1/2 tbs of red chili powder
- 1 tbs of garam masala
- 1 tbs of chicken masala
- 1 chopped capsicum
- 7 to 8 curry leaves
- 2 to 3 tbs of olive oil
- 1 tbs of coriander powder
- 1/2 tbs turmeric powder
- salt as us taste
- coriander leaves
For marination:
- 1 big tbs of yogurt
- 1/2 tbs of red chili powder
- 1/2 tbs of turmeric powder
- 1/2 tbs of salt
- 1/2 tbs of chicken masala
Method:
First wash the chicken pieces very well..
Put the pieces in a bowl then marinate the chicken pieces with some yogurt,turmeric powder,red chili powder,salt & chicken masala..Keep the bowl aside ...
Take a non stick pan ,heat some oil in the pan.
add bay leaves,cinnamon,cardamon,black pepper,dry coriander,cumin seeds,curry leaves & saute for seconds..
Then add chopped onion & saute till its color turn brown..
Then add ginger,garlic paste to the pan & let it cook for few minutes..
Then add garam masala, chicken masala & capsicum to it & add 1/2 cup of water to it & mix it well..Let it cook with cover lid for 15 minutes...
Then add turmeric powder,red chili powder,coriander powder & saute ..
Then add the grated tomato into it cook it for few minutes,add salt to taste..
Then put the gas off & wait till the mixture become cool then add yogurt to it..mix it well then put the gas on & add some water to it..Cook it for 2 minutes..
Then add the marinated chicken pieces to the mixture & mix everything properly..;Let it cook for 7 to 8 minutes..
After 15 minutes open the cover lid & put your gas off..Then add fresh chopped coriander to it & mix it..
Your KADAI CHICKEN is ready to served!!!
